What is HACCP (or HACCP)?

HACCP is a key quality assurance system in the field of food production and catering. The standard means «Hazard Analysis and Critical Control Points» or, in Russian, hazard analysis and critical control points.

In simple words, HACCP is a kind of insurance for products that fall on your table. This international food safety management system is widely accepted in 160 countries of the world, including Russia.

The main purpose of HACCP is to ensure control over the food production process, minimize risks and prevent possible defects. From the selection of raw materials to the moment when the product falls into the hands of the consumer, the HACCP system monitors each stage.

The system is based on seven key principles:

  • Risk and hazard analysis. Assessment of possible problems and risks in the production process.
  • Identification of critical control points. Identification of key points where problems may arise.
  • Setting critical limits. Setting security boundaries for each critical point.
  • Monitoring of the production process. Systematic monitoring of the process to identify potential problems early.
  • Application of corrective measures. Taking measures to correct the identified problems.
  • Documenting the process and results. Careful recording of each stage of production and its results.
  • Checking the system and documentation. Regular checks to make sure that the HACCP system is working effectively.

Why is HACCP necessary in the field of food production?

Since 2013, all food production facilities in Russia have been required to implement the HACCP system in accordance with Technical Regulation TR/CU 021/2011 «On Food Safety». This requirement stems from the need to develop, implement and maintain procedures based on the principles of HACCP.

Many manufacturers may have concerns about the strict standards and costs of implementing this system. However, it is worth considering HACCP not as a burden and penalties on the part of government agencies, but as an investment in the successful future of the enterprise. Washing and disinfection in the HACCP system

Within the framework of the HACCP system, cleaning, washing and disinfection of premises and equipment are key steps in terms of ensuring the sanitary and hygienic condition of the production space. These procedures are aimed at preventing dangerous factors that can lead to spoilage of the finished product, and are strictly regulated by regulatory documents such as SP 2.3.6.1079-01 (paragraphs 6.4, 5.11 — 5.15) and TR CU 021/2011 (Article 11, paragraph 3, paragraph 7).

Frequency of events:

  • Cleaning, washing, disinfection, deratization and disinfection of industrial premises: Must be carried out at regular intervals.
  • Cleaning, washing and disinfection:
    • technological equipment and inventory,
    • wet cleaning with the use of detergents and disinfectants,
      dining tables.
  • General cleaning of all premises: Carried out at least once a month.

Organization of cleaning according to HACCP

All premises of enterprises must maintain a high level of cleanliness. The current cleaning is carried out regularly according to the schedule and additionally if necessary.
The company determines the frequency of cleaning, washing, disinfection, deratization and disinfection of industrial premises, as well as cleaning, washing and disinfection of technological equipment and inventory used in the food production process.

Wet cleaning with the use of detergents and disinfectants is carried out daily in the production workshops. General cleaning and disinfection of all premises are carried out at least once a month, if necessary — disinfection and deratization. For cleaning, inventory is allocated for each room, which is stored in specially designated places.

At the end of cleaning, all cleaning equipment is washed, dried and stored in its pure form. Cleaning of production, storage, auxiliary rooms and toilets is carried out by special personnel, and cleaning of workplaces is carried out by employees at the workplace.

Only detergents and disinfectants approved by the State Sanitary and Epidemiological Service are used. Sanitary treatment of technological equipment is carried out as pollution and after completion of work. Production tables are thoroughly cleaned, rinsed with hot water and wiped with a dry clean cloth after each working day.

Foam washing systems and their role in the HACCP system

In the context of HACCP, the use of modern foam washing systems is becoming an important element of ensuring high standards of sanitation and hygiene in industrial premises. They provide effective means for cleaning, washing and disinfection, meeting the requirements of safety and product quality.
