WASHING METHODS IN A FOOD ENTERPRISE

Sanitation in food production plants is a very important process. The main task is the complete removal of contaminants, microorganisms and product residues from the surface of equipment, inventory, containers and production areas.

There are three main types of cleaning:

  • manual labor;
  • use of high-pressure apparatus (HPA) and foam generators;
  • stationary washing stations.

Manual labor is the most conservative solution, however, this method does not always achieve the required quality of cleaning and requires a lot of time. It is also ineffective from an economic point of view.

A more modern approach is the use of foam generators and pressure generators. This equipment requires installation, connection into a single system, and manual application of the cleaning solution. Moving equipment in separate rooms is a challenging task.

The third option is to use stationary washing stations. This type of cleaning allows you to reduce the time of sanitary work and save the amount of detergents and water. A stationary washing station is a system consisting of a pumping station, where the necessary water pressure is generated, and satellite stations located throughout the workshop in cleaning areas.

In addition to choosing a washing method, certain requirements are imposed when sanitizing in food production:

01 REGULARITY OF CLEANING AND DISINFECTION It is necessary to monitor the regularity of washing and disinfection
02 PERSONNEL TRAINING Use specially trained personnel, provide them with overalls, shoes and appropriate washing equipment.
03 INVENTORY PREPARATION It is necessary to have a supply of equipment and disinfectants, and also to allocate a special room for washing and disinfecting containers, equipment and vehicles.
04 CLEANING SURFACES Before washing and disinfecting, surfaces must be thoroughly cleaned of product residues
05 COMPLIANCE WITH STANDARDS AND GOSTS To prepare cleaning and disinfecting solutions, use products and water that meet the requirements of GOST.

The optimal solution for ensuring a high level of hygiene in production is the use of stationary washing stations.
