Washing equipment in the food industry: using foam stations

Food producers are subject to strict requirements for cleanliness and hygiene in production. Ensuring food safety is a top priority. As a rule, issues of cleaning premises and washing equipment are resolved using manual labor or equipment not intended for use in food enterprises in the daily cleaning regime. This can lead to insufficient cleanliness and an increased likelihood of food contamination.

Foam posts

Stationary foam washing stations are designed for creating and applying foam based on alkaline and acidic detergents on the surface to be cleaned, as well as for disinfecting equipment. Foam formation occurs by automatically converting the detergent into a thick foam and applying it to the surface being treated, followed by rinsing with water under pressure.

The foam station is an installation where water, detergent and compressed air are mixed. The main purpose is to apply foam to the surface to be treated. The main part of the foam station is an injector from the German company R+M. Depending on the tasks, 2 types are used:

  • ST168 — for applying a cleaning solution based on alkaline, acidic, neutral detergents. The Odyssey SP1 and Odyssey SP2 posts are made on the basis of the ST168 injector.
  • ST164 — for those cases when, together with foam washing, it is necessary to carry out disinfection based on peracetic acid. The Odyssey SP2D and Odyssey SP3 posts are made on this injector.

Operating principle

When applying foam to the treated surface, due to the kinetic energy of the foam, solid particles of contaminants are separated from the surface. The liquid released from the foam, when the nearest layer of bubbles is destroyed, wets the surface. The thickness of the wetting liquid layer is approximately 3 µm. As a result, contaminant particles are detached from the surface and concentrated in thickened areas of the films.

Some particles are drawn into the foam to a height of 1-3 bubbles. The most intense change in the dispersed composition of the foam occurs during the first minute after its formation and, accordingly, its application to the surface. Then, gradually, the process of removing contaminants and their distribution in the films ends. 

The effect of suction of contaminant particles into the foam increases significantly when the lower layers of the foam, containing many particles, are mechanically mixed with the upper layers. Such mechanical action can be carried out by rubbing the foam over the surface, for example with brushes, or by treating with a sprayed stream of water. During the process of foam decomposition, due to the high capillary pressure in it, an additional mechanical effect on contaminants occurs, which increases the cleaning efficiency.

The dirt-holding ability of foam reduces the possibility of re-sedimentation of dirt particles torn from the surface. The presence of a thin oil layer on the treated surface not only does not reduce, but even increases the efficiency of removing dust and solid particles during foam processing. During the interaction of foam with viscous semi-liquid contamination, the contamination softens to a liquid phase, then the foam crushes droplets and films of contamination into individual globules, which are drawn into the foam.

Thus, the highest quality way to clean premises and wash equipment is to use external foam cleaning systems. Their use increases the hygienic standards of the enterprise, which serve as the basis for high quality products.
